Ingredients:
1 lb beef stew meat, cut into bite-sized pieces
1 tbsp olive oil
1 onion, diced
2 carrots, sliced
2 celery stalks, chopped
3 cloves garlic, minced
6 cups beef broth
1 can (14.5 oz) diced tomatoes
¾ cup pearl barley
1 tsp dried thyme
1 tsp dried oregano
1 bay leaf
Salt & pepper to taste
Fresh parsley for garnish
Directions:
Heat olive oil in a large pot over medium-high heat. Brown the beef, then remove and set aside.
In the same pot, sauté onion, carrots, and celery until softened.
Add garlic and cook for another minute.
Pour in the beef broth and add the browned beef, diced tomatoes, barley, thyme, oregano, bay leaf, salt, and pepper.
Bring to a boil, then reduce heat and simmer for about 45–50 minutes, until the barley is tender.
Remove bay leaf, garnish with fresh parsley, and serve warm!
